IL Geco 2015 Cap Classique
Pinot Noir and Chardonnay grapes were picked by hand and co-pressed. Fermentation took place in
a temperature controlled stainless steel tank at 10°C. The base wine was then racked to old 400L oak
barrels where it underwent Malo-Lactic Fermentation and ageing on the lees for 14 months before
bottling for the second fermentation on 03-05-2016. The wine was disgorged on 09-04-2021 after a
lengthy period on the lees.

Clearly identifiable and pronounced flavours and aromas (Lemon, Baked Green Apple, Brioche, cream) across various clusters (Flowers, Fresh fruit, baked fruit, Mineral) creates a complex wine. The acidity is well balanced by the full fruity palate and a hint of candied sweetness indicative of Maillard Reaction. A creamy, fine enduring mousse is followed by a well-structured long finish.
